It’s officially fall! Who else is stoked? This is my favorite time of the year. All the cozy stuff is on the shelves, pumpkins and orange leaves everywhere, and the FOOOD ? ??
Tonight I made a dinner celebrating fall. Stuffed acorn squash with a balsamic glaze that I forgot to put on until after the picture! ? simple ingredients just takes a little time, but great for a weekend meal, and so good! Here’s what I did:
.
1 acorn squash
2 T vegan butter
1 T evoo
1/2 C uncooked quinoa- cooked as package says
1/2 med red onion finely chopped
1/2 red bell pepper finely chopped
2 large kale leaves chopped
1/2 t oregano
1/4 t sage
1/4 C toasted pine nuts
1 1/2 cloves garlic chopped
Salt and pepper to taste
1/2 C balsamic vinegar

Cut squash in half and sprinkle with salt and pepper, add butter roast in 400 degree oven for 45 minutes to an hour
While roasting make balsamic glaze by simmering vinegar over medium heat until it costs the back of a spoon.
Cook onion and pepper in the olive oil until translucent, add kale, garlic, oregano, sage cook about 3 minutes.
Add in quinoa and toasted pine nuts, then add to cooked squash and top with glaze. ?
