It’s my first time joining in on the #veganweekendpotluck hosted by @dawnsplantkitchen and this week’s theme by @nutristarliving focuses on 5 simple ingredients to create a delicious vegan dish!🔥🔥🔥

Meet my Bok Choy & Beans 🌱😋🤩

This one-pan dish comes together w FIVE ingredients … I like to cram as much as I can into most things; holding back was hard, but it definitely paid off!! 😇

To MAKE Your Own Bok Choy and Beans you’ll need; white cannelini beans, bok choy, olive oil, garlic and
Salt 🖐💯

Start w olive oil and garlic and dump the entire can of cannelini beans (juice and all!) into a pan and cook for 10 mins on medium-high. Finish w a bunch of spinach and mix through until lightly wilted! Add salt and pepper to taste. 🤤🤤🤤

This is a hearty stand-alone dish, or a delicious side! I paired it w a heaping-helping of veggie-fried rice and ALL THE candied SEITAN … yes I said candied seitan!!! Lol

I simply shaved down a @streetcityseitan roast and marinated it in smoked paprika, liquid smoke, soy sauce, garlic and maple syrup! Then heated in a tinfoil pouch; PERFECTION! ⭐⭐⭐⭐⭐
