It’s lockdown 3.0 so what does that call for? Banana Bread 🍌 —————————————————————————
Day 12 of #veganuary so a bit of baking was needed. I found this recipe in the @veganfoodandliving January magazine and it seemed too good to miss (and has lockdown vibes 🤪) plus it was so easy to make I think it’s perfect for @abbiethevegan_’s initiative #supportforvegans as this is something everyone can make including new vegans 🌱

All you do is sieve the flour, baking powder, ground cinnamon & ground ginger into a large bowl. Rub in the margarine to a breadcrumb consistency. Add the sugar, mashed banana, chopped walnuts & raisins. Gradually add the milk until there is a soft dropping consistency.

Ingredients:
– 200g @dovesfarm Self-Raising Flour
– 1/2tsp @dovesfarm Baking Powder
– 1tsp Ground Cinnamon
– 1tsp Ground Ginger
– 60g Diary Free Margarine (I used @purefreefrom Sunflower Spread)
– 110g Sugar (I used 50/50 split of golden caster and light brown sugar)
– 175g Over-Ripe Bananas
– 25g Chopped Walnuts
– 25g Raisins
– 110ml Dairy Free Milk (I used @alpro Almond Milk) – you may need less milk depending on the ripeness of the bananas
– Topped with @oykos_uk Dairy Free Stracciatella Coconut Yogurt & Cacao Nibs
