It’s getting quite cold over here, so we are bundling up and making cozy comfort food! Today, mom made a big pot of meatballs. She has been trying to recreate Pop Pop’s meatball recipe because he refuses to share the whole recipe. But, she thinks shes finally gotten it right! (Pop Pop is my human grandpa. He sneaks me human treaties then gets yelled at by mom.)

What you’ll need for the meatballs…
2 lbs ground beef
1 lb ground pork
2 eggs
1/3 cup nutritional yeast
2 cups gluten free bread crumbs
1 tsp salt
1 tsp pepper
2 tbsp parsley
1 tsp basil
1 tsp oregano
1 1/2 cups almond milk

What you’ll need for the sauce…
2 24 oz jars tomato sauce
24 oz water (mom just uses the empty sauce jars to measure, and it helps get the remaining sauce out!)
12 oz tomato paste
1 lb ground Italian sausage
1 tsp salt
1 tsp pepper
2 tbsp parsley
1 tsp basil
1 tsp oregano
1/2 cayenne pepper

What to do…
1. mix all the meatball ingredients together
2. in a large pot, brown and crumble sausage
3. mix the remaining sauce ingredients into the pot with the sausage
4. pour the majority of the sauce into a separate bowl, leaving a layer of sauce on the bottom of the pot
5. form the meat mixture into meatballs (careful not to squish them too much!)
6. create a layer of meatballs on top of the layer of sauce in the pot
7. spoon a layer of sauce over the layer of meatballs
8. continue alternating between meatballs and sauce
9. cover the pot and bring it to a boil over medium heat
10. reduce heat to low and cook for 4 hours
11. check that the meat is cooked through then enjoy!
