It’s finally a rainy Sunday here (which dare I say I’m loving!) and I was looking for some healthy-ish treats to make with the girls later today. I came across this yummy recipe and it has the double bonus of using up our bananas which seem to be getting browner, faster these days 🧐.

BANANA BREAD MUFFINS 😃🍌
3 very ripe bananas
1 egg (I use a flax 🥚)
1/3 cup coconut sugar
1/4 cup melted coconut oil
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tbsp lemon juice
1 cup white whole wheat flour (or regular)
Chocolate chips (I use dark chocolate)
Oven setting: 350F. In a bowl, mash bananas really well with a fork into a liquid goop. Then, whisk in egg with your fork. In a bigger bowl, mix together dry ingredients. To the wet ingredient bowl, mix in melted coconut oil and lemon juice. Add wet to dry & mix well. Fold in chocolate chips. Spray muffin tin with coconut oil. Transfer mix to tin, using spatula to get all the batter. Bake at 350F for 25 minutes. Once completely cool, store in a sealed container. 💛
