This is gingerbread loaf recipe will not disappoint I promise! A bite of this brings me back to eating “elephant ears” at the Oregon Zoo or at the county fair when I was younger! My mom already wants me to make another one as soon as we finish this loaf! Bring on the holiday loafs?
Ingredients:
Gingerbread Loaf
•2 cups cassava flour
•1/3 cup coconut sugar
•1 tsp cinnamon
•1/2 tsp ginger
•2 tsp baking powder
•1 tsp baking soda
•2 flax eggs
•1/4 cup coconut oil
•1/2 cup almond milk
•1 tsp vanilla extract
•1/4 cup molasses
Crumble topping
•1/4 cup almond flour
•2 tsp coconut sugar
•1 tsp cinnamon
•1 tbsp vegan butter
Directions:
•mix all loaf ingredients together in a medium sized bowl
•pour mixture into a lined bread pan
•mix the crumple topping ingredients together and spread on top
•cook at 350° for 40-45 minutes
