It’s almost Friday and we thought we’d make something spicy!!! Here is a spicy coconut lentil dahl, vegan and utterly hearty?
1 medium onion, either brown or red, chopped
3 garlic cloves, minced
A thumb sized piece of ginger, grated
1 tbsp heaped tomato paste
2 tsp ground cumin, adjust accordingly
2 tsp of paprika
2 tsp of chilli flakes
250 grams split red lentils
1 can coconut milk
1. Pan fry the onion, ginger and garlic. Once its soft add the tomato paste and spices. Fry for a few minutes to release their aromas.
2.Add the lentils and coconut milk and bring to a boil and then simmer for 1 hour constantly stirring and adding water so the lentils don’t stick to the pot. Serve warm with some roti or basmati rice!
All tastes buds are different so we suggest you taste the dahl while it’s cooking and add more spices as required.
