Italian crostini with eggplant, cherry tomatoes and olives

Ingredients:

* 1 baguette.
* Eggplant – 1 pc.
* Olives – 50 g
* Cherry tomatoes – 180 g
* Garlic – 3-4 cloves.
* Red onions – 1/4 of the onion.
* Parsley is a small bunch.
* Basil is a small bunch.
* Balsamic vinegar – 1 tsp
* Salt and spices to taste. I used salt and black pepper.

Recipe:

Cut the eggplant and cherry tomatoes into cubes.

Finely chop the red onion, olives and herbs. Pass 2 cloves of garlic through a press.

Send the chopped eggplant and garlic to a preheated pan with vegetable oil. Add salt and pepper to taste. Fry until tender.

Put chopped onions, olives, greens and cherry tomatoes into a deep bowl. Add fried eggplant with garlic and 1 tsp. balsamic vinegar. Mix everything well. #veganfoodshare

Cut the baguette into 1 cm thick slices. Sprinkle the bread on both sides with vegetable oil and dry in a dry hot frying pan for 2 minutes, sometimes turning. You can also bake bread in the oven.
A clove of garlic (you may need 2 cloves), cut in half and rub on warm bread. #veganbest

Place the prepared filling on each slice of bread. Serve immediately.
