Italian and Herb Veggie Salad (serves 8)

This salad is not only healthy and delicious, but it’s simple and can be customized to your own family’s veggie preference. I got this recipe from my sister and I look forward to it every holiday! What holiday sides are you looking forward to eating?

Salad Ingredients:
– Two (2) cups Broccoli, small florets
– One head of Cauliflower, small florets
– One (1) 10oz bag of frozen small sweet peas
– One (1) 11 oz can of white shoepeg corn
– Three (3) celery stocks
– One (1) medium orange bell pepper
– One (1) small can of sliced water chestnuts
– One (1) small red onion
– One (1) cup cherry tomatoes
– One (1) can small whole black olives
– One (1) can small pitted green olives
– Herbs de Provence, to taste
– Salt, to taste
– Pepper, to taste

Dressing Ingredients:
– One (1) cup aged balsamic vinegar
– 1/2 cup vegetable oil

Directions:
– Add veggies to large bowl
– Mix dressing ingredients to small covered bowl and shake well
– Drizzle ½ dressing on salad and toss
– Drizzle remaining dressing on salad and toss
– Place in refrigerator to marinate (the longer, the better)
– Enjoy!
