It is a nice idea to add vegetables in your bread/cake and increase its nutritional value. I’ve made Zucchini and Chocolate bread. The name may sound little weird but belive me the taste is absolutely amazing and you will love it. This Chocolate Zucchini Bread is guaranteed to be your new favorite zucchini recipe. I’ve not used any kind of refined ingredients and made it perfectly healthy. Whole wheat flour and brown sugar were the substitute for refined flour and white sugar. You can use Jaggery powder too. Use below recipe to make it.
Oil 2 tablespoon
Brown sugar/Jaggery powder 100gm
Whole wheat flour 200gm
Cinnamon 1/2 teaspoon
Nutmeg 1/4 teaspoon
Baking powder 1.5 teaspoon
Baking soda 1 teaspoon
Salt 1/4 teaspoon
Dark chocolate 150gm (you can use chocolate chips as well)
flax seeds puree 50gm (this is substitute for an egg. You may use 1 egg here)
Zucchini (medium) shredded 2 nos
Preheat oven at 175 degree c. Grease a loaf tin with little oil. Set aside.
Wash and grate the zucchini, squeeze out the excess liquid and measure 1 cup of zucchini.
In a large mixing bowl, combine oil, egg/flax puree, brown sugar/jaggery powder, milk and zucchini. Mix well
Mix flour, spices, baking powder, baking soda and salt. Add dark chocolate chunks. put this to wet mixture and fold all the ingredients, pour the batter into greased loaf pan. Level it with a spatula.
Bake at 175 degree c for 30-35 min, or until top of bread is golden and toothpick comes out clean.
Allow the bread the cool completely in the tin for at least 20 min. Remove from pan, and slice it.
