In the mood for Mujadara مجدرة today!Very simple & delicious recipe with few ingredients .
Best of all, it’s vegetarian and super healthy for you !
Here’s my recipe:
2 & 1/2 cup brown lentils soaked and rinsed
2 large onions ( white )
1/4 cup extra virgin olive oil
1 cup of coarse bulgur or # 2 or 3 ( crack wheat )
1/2 teaspoon salt ( I put 1 teaspoon ?)
1/2 teaspoon Cumin
How to cook :
In a pot boil the Lentils in 6 cups of water for 20 minutes or until water is absorbed .
In 2 tbs. oil sauté the onions until golden brown ( 15 min depends on the stove )
Carefully Add 3 cups of water maybe more , (you check if it needs ) on the golden onions wait for it to boil then transfer to the lentils . Once it starts to boil, add the bulgur and give it couple of stir, once it starts to boil put on low heat then cover the pot and let it cook (25 to 30 min ) take a spoon and taste if the wheat is completed cooked .
Place on a serving plate and decorate it with fresh green mint or parsley or anything you want !
