In Preparation For The Summer Weather This Weekend In Amster

In preparation for the summer weather this weekend in Amsterdam, I am sharing this gazpacho with a twist. A WATERMELON & TOMATO GAZPACHO is for me an unexpected marriage made in heaven. Perfect sweet acidic balance, oh, and it’s all raw(no cooking required), plus it’s made from a short and cheap list of ingredients. ⁠Given that watermelon is on every street corner at the moment, why not try it in as many dishes as possible!⁠

INGREDIENTS: (Serves 2-4)⁠
Liquid ingredients:⁠
– 2 cups, Watermelon⁠
– 1/2 cup, Tomatoes deseeded⁠
– 4 tbsp, lime juice⁠
– 2 tbsp, ginger juice and/or a fresh piece of ginger⁠
– pinch of salt⁠

Solid ingredients:⁠
– 2 cups, Watermelon diced small and pips removed⁠
– 1/2 cup, cucumber, diced small⁠
– 1/2 cup, tomato, deseeded & diced small⁠
– 1 tbsp, shallot, finely diced⁠
– 1 tsp, chilli, deseeded and finely diced⁠
– 1 tbsp, coriander chopped⁠

METHOD:⁠
– ⁠Blend all the liquids in a high speed blender. Pour into a bowl.⁠
– Add all the solid ingredients to the bowl and mix.⁠
– Taste and if needed season with more salt & pepper⁠

TO SERVE:⁠
– Drizzle with olive oil.⁠
– Serve with fresh coriander sprinkled on top.⁠
