I’m so excited to try these Plant-Based Breakfast Burritos by Claire Cary
If you’re like me, than a breakfast burrito is one of the best ways to have breakfast!

Ingredients:
-4 large tortillas
-1 block extra firm tofu
-3 cloves garlic
-1 tbsp olive oil
-1/2 tsp turmeric
-2 tbsp water
-1/2 tsp salt
-1 small red onion
-2 bell peppers
-1 can black beans
-2 cups kale
-1 avocado
-6 Lightlife Plant-Based Breakfast Patties
-Salsa to serve

Instructions:

1. Add the Breakfast Patties to a skillet with 2 tbsp of oil. Sauté on each side for about 3 minutes or until lightly golden and crispy.

2. Meanwhile, mince the garlic and add to a skillet with the olive oil. Sauté for 2-3 minutes or until golden brown.

3. Add the tofu and crumble with your hands or a fork until it has a scrambled egg consistency.

4. Add in the turmeric, water and salt. Mix well to combine and simmer for about 5 minutes.

5. Add the sliced bell peppers and sliced onion to another skillet and sauté until the onion is translucent. Add in the kale and cover to let wilt.

6. Assemble your burritos with a base of the tofu scramble, then layer on the black beans, sautéed veggies, avocado, Breakfast Patties and salsa.

7. Roll towards the center, tucking in the edges as you roll. Press down lightly to seal. Enjoy!
