I’m not a huge salad girl. I tend to eat veggies in stir fry’s, curries or even smoothies but I am trying to add more raw veggies into my diet. So, here’s an easy salad idea 👇

Broccoli Salad

Salad ingredients:
– 1 head of broccoli
– 2 cups shredded carrots (you can buy them like this or grate them)
– 2-3 green onions
– 1/4 cup sunflower seeds
– 1/4 cup dried cranberries

Roughly chop broccoli into small- medium pieces and put into a bowl. It’s good to have a variety of sizes. Add shredded carrots, chopped green onions, sunflower seeds and dried cranberries and toss.

Salad dressing:

– 1/4 cup water
– 2 Tbsp balsamic vinegar
– 1 Tbsp red wine vinegar
– 1-2 Tbsp maple syrup (depends how sweet you want it)
– 2 Tbsp lemon juice (about 1 lemon)
– 1 Tbsp vegan mayonnaise (or sub neutral tasting oil)
– 1 garlic clove, minced
– 1 tsp Dijon mustard
– A few dashes of cracker pepper

Whisk all ingredients together and pour over the salad!
