I’m making refrigerator pickles for July 4th! I like mine garlicky with a good amount of dill. Stick them in the fridge for 2 days and you’ll have pickles that are better than any store-bought, I promise. I added the recipe below but if you need some visuals head over to my story.

This is for 2 large jars of pickles. Feel free to halve this recipe.

2 large English/Greenhouse Cucumber (you can use any cucumber really)
1/2 of a sweet onion, sliced
10 cloves of smashed garlic (I told you I liked them garlicky)
2 Bay leaves
10-12 sprigs of Dill
4-6 tsp Peppercorns

For the Brine:
4 Cups of water
2 cups of Apple Cider vinegar (White vinegar will work, too)
2 Tbsp Kosher salt
3 tsp Sugar

Add all the ingredients for the brine and heat until the salt and sugar are dissolved. Cut the cucumber in rounds or spears and place in jars along with all the other lovely aromatics. Fill the jars with the brine, cover and store in the fridge for 2 days or until you’re ready to eat them.
