I’m a sucker for all things Mediterranean- I absolutely love how clean and satisfied I feel after eating the food! My favorite Mediterranean dish is definitely FALAFEL!! I love how versatile they are- I could eat them in a pita sandwich or in a wrap or in a salad or just by themselves!! Wait did I say or….I meant ALL of the above!! My favorite!

Serves: 8
Ingredients:
-2 cups dried chickpeas
-4 tbsp all-purpose flour
-1 medium sweet onion, chopped
-6 tsp minced garlic
-3 green onions
-2 cups parsley
-2 cups cilantro
-2 green chilies
-1 tbsp lemon juice
-2 tsp cumin powder
-4 tsp salt, or to taste
-2 tsp chili powder, or to taste
-1 tsp baking powder
-3/4 cup water
-Oil for frying

Instructions:
1. Soak dried chickpeas in a bowl of water for 12-24 hours.
2. Remove the chickpeas from water and dry.
3. Put chickpeas, all-purpose flour, sweet onion, garlic, green onions, parsley, cilantro, green chilies, lemon juice, cumin powder, salt, chili powder, baking powder, and water into a food processor. Depending on the size of your food processor you might have to do this in two batches.
4. Mix all ingredients in food processor until chickpeas are in small pieces (like grains). If your food processor is getting stuck because it’s too dry, add a little water.
5. Remove batter from food processor. If too liquidy, add 1-2 tbsp flour and mix in to get a thicker consistency (I didn’t need to)
6. Scoop up falafel batter and use your hands to make balls with the batter. You can do them as small/big as you like.
7. Heat a large pot of oil on medium heat. Once the oil is warm (test by putting in a little batter and seeing if it comes up quickly), start adding the falafel balls.
8. Fry falafel balls for about 5-7 minutes, flipping occasionally. When the balls are dark brown on the outside, remove from oil. Do this in batches until you fry all the balls.
9. Serve warm and enjoy!

Tips/Tricks:
-Do NOT use canned chickpeas for this!! They will break apart.
-If you want to eat the falafel at a later time after frying, put them in the air fryer for 5 minutes. Microwave makes them soggy.
-Freeze excess batter before frying for an easy meal at a later time!
