I’m a huge sucker for pasta/gnocchi especially when it comes with a healthy serving of pepper and tomato pesto. However I’m always trying to find healthier alternative to dishes and I think I’ve nailed it. I got the idea for cauliflower gnocchi last night when I realise there was half of one left in the fridge. It was super easy to make and tasted the same as potato gnocchi.

Ingredients:
Half a cauliflower
100g of plain flour
Oat milk
Salt
Pepper
Olive oil

Method:
Take the cauliflower and remove any leafy greens from it, then cut off the trees. Place in a food processor until completely blitzed (if no food processor is available you can use a grater).
Take a cheese cloth and place all the blitzed cauliflower in the centre and squeeze out all the water.
Then place in a bowl. Add a splash of milk and olive oil to the bowl then add a small amount of flour, kneed in the flour and then add more. Repeat this until you can form little gnocchi sized balls.
Boil hot water in a pan and add the cauliflower balls, when they begin to float remove from the pan and transfer to a hot frying pan. Here fry in oil and add sauce of choice, or some salt, pepper and olive oil will work a treat.
