If you’ve been following me for a bit, or have known me at all, you’ll know that I love Middle Eastern food. Like a little too much.

It’s packed with nutrition and flavour. Loads of fiber, protein, and good fats. Plus loaded with calcium because of the tahini.

So here goes folks, the recipe for Mutabbal and Baba Ghanoush.

Baba Ghanoush is like an Arabic version of our traditional Baigan ka Bharta. Super simple to make.

Try it out and let me know how you like it!!

You’ll need –

Ingredients
? Eggplants (the bigger and thicker ones)
?Olive oil (Preferably EVOO)
?Tahini **
?Some cloves of garlic
?Lime juice
?Salt
?Cumin
?Pomogranate molasses if you have it

Preparation method –
? Start by smoking the eggplant(s)
?Once they are roasted and smoked – peel off the black skin. Keep the pulp aside.
?In a blender, add the smoked eggplant pulp along with the EVOO, tahini, some cloves of garlic, lime juice, cumin, salt to taste.
?Blend them all up till you get a thick creamy paste.
?Serve immediately or cold – garnished with some olive oil and paprika.
?This is your Mutabbal.

?Now on order to make Baba Ghanoush – use the same Mutabbal as a base – and all whatever else you’d like to.
I’ve added chopped onions, tomatoes, coriander, mint leaves, and some Pomogranate seeds.

?Enjoy with some pita bread, falafel, use it as a dip for chips, or with any other kind of bread. I enjoy it all by itself as well.

?Gobble it up!
? Can be refrigerated and stores for a couple days.

?I usually have it with my Akki roti or Ragi roti.

Obviously there can be variations to this basic recipe. Feel free To add your own twists to it.
