If you’re struggling to take certain foods out of your diet, focus on ADDING more healthy foods instead! And if you’ve never tried eggplant before, my recipe for Eggplant with Cashew Cream and Pomegranate Seeds is a delicious place to start. 😍👇

🍆 Ingredients:

1 large eggplant
Handful of raw cashew
Seeds of half a pomegranate
Rind of 1 small lemon, finely grated
10 fresh thyme stalks
1 small garlic clove, diced
3g sumac
10g flat leaf parsley, chopped finely
Avocado oil
Olive oil
Salt and pepper to taste

🍆 Directions for Eggplant:

1. Preheat your oven to 400°F
2. Cut the eggplant lengthwise into 5 slices of even thickness, about 1 centimeter thick.
3. Place the slices evenly onto a baking tray lined with baking paper.
4. Drizzle the avocado oil across the eggplant slices.
5. Remove the thyme leaves from the stalk and sprinkle on top of the eggplant.
6. Sprinkle the lemon rind on top of the eggplant.
7. Bake in the oven for 40 minutes.

🍆Directions for Cashew Cream:

1. In a food processor place the cashews with 1⁄2 cup of warm water, add a pinch of salt and pepper, and mix until you have a smooth texture.
2. In a separate bowl, mix the garlic, coconut cream, salt and pepper.
3. Sprinkle with sumac, flat leaf parsley, the pomegranate seeds and a drizzle of olive oil. Serve.
