If you’re from Rochester, New York you know what a garbage plate is. It’s typically a bunch of different foods thrown together on one plate.
It is not healthy. I absolutely love the concept though! I decided to take some fresh veggies + leftovers to make my own version of a garbage plate.
Roasted cherry tomatoes,
Yukon gold potatoes
Thai Tofu (leftover)
Brussels sprouts (leftover)
Basmati rice (leftover)
Preheat oven to 375 degrees. Wash + cut veggies. Spray oil on a pan. Roast on one pan then combine in a bowl. Let cook for 10 minutes.
Add leftover tofu, + Brussels + rice. Roast for 5-10 minutes.
Preheat oven to 375. Cut tofu open by slitting the lid. Drain. Cut up tofu into cubes. Spray pan with cooking spray. Pour tofu in a small square pan. Add in Full Circle Organic Spicy Thai sauce. Cook for 15 minutes.
Preheat oven to 375. Rinse Brussels sprouts. Chop into small pieces. Spray cooking spray on a baking sheet. Pour Brussels on the pan. Drizzle avocado oil all over. Sprinkle garlic + onion powder with salt + pepper. Cook for approximately 10 minutes. Chop up a handful of cashews. Take pan out. Add a handful of dried cranberries + cashews to the pan. Stir ingredients all together. Place back into the oven for about 10 more minutes.
Bowl water. Add rice. Cook for about 11 minutes.
