if you didn’t…. here’s my savoury spinach/mushroom cups! ??⠀

Not the most photogenic but so yummy and filling!! My fam loved them. Recipe will be up on the blog by tonight. ⠀

what you need:⠀
* button (or other) mushrooms, washed and chopped into small chunks⠀
* spinach (as much as you want – I used 2 cups) ⠀
* vegan phyllo sheets (not advertised as vegan but just read the ingredients!) ⠀
* vegan cheese (optional but delicious. choose one that will melt!) ⠀
* olive oil (or neutral oil of choice) ⠀
* any form of cooking spray/oil ⠀
* salt/pepper⠀
* thyme (I used dried)⠀
* scallion (could also use onion) ⠀
* muffin tin ⠀

sauté the scallion in some olive oil. When soft and translucent, add the mushrooms spinach and stir to mix. season with salt and paper and add thyme. When spinach has wilted, it’s close to done.⠀

in the meantime, spray the muffin tin and add phyllo sheets into the tin, it’s important the sheets are longer so they will cover the cups. Layer the sheets so it’s thick enough to hold the filling. ⠀

add the mixture into each muffin cup, try to keep them even. When all distributed, add vegan cheese on top and then cover with the ends of the sheets that were sticking out. Use more phyllo if needed. Add more olive oil or spray on top to hold down the sheets⠀

bake @ 350 for 12-18 minutes! Keep an eye on them. They are done when crispy and lightly brown!⠀
