Make a batch of this pumpkin spice chia pudding the night before and you’ll have a healthy breakfast ready to go every morning during the week. ?⁠

Pumpkin spice chia pudding / By @nutritious.cravings⁠

3 portions?⁠
Plant-based?⁠
Gluten-free?⁠

Ingredients⁠

• 6tbsp chia seeds ⁠
• 300ml plant-based milk ⁠
• 200g pumpkin puree ⁠
• 2tbsp maple syrup ⁠
• 1tsp pumpkin spice ⁠
• 1/4tsp salt⁠

1. Place all ingredients in a lidded jar and mix well. Wait 5mins then mix again. Close the lid and place jar in the fridge overnight (or at least 2hours). ⁠

2. When ready to eat, divide into three serving glasses or bowls and serve with nuts, fruit and vanilla yoghurt.⁠
