I would love to start my Sunday with these!!Vegan Blueberry Sweet Rolls💙🤍🤤
Start it off with my basic cinnamon roll dough, but instead of cinnamon filling- I threw in blueberries! Oh my goodness!! I’ll never look at a cinnamon roll the same. You have the option of enjoying these with or without vegan cream cheese frosting!
Vegan Blueberry Sweet Rolls
½ cup melted began butter
¼ cup maple syrup
2 cups almond milk
1 tsp salt
1 packet active dry yeast (about 3 tsp)
5 cups all purpose flour don’t substitute!
½ cup softened vegan butter
¾ cup sugar
2 cups blueberries
additional flour for rolling
Vegan Cream Cheese Icing
¼ cup softened vegan butter
4 oz vegan cream cheese
1.50 cups powdered sugarplus more for a thicker icing
Prepare your dough by mixing the melted vegan butter, almond milk, maple syrup, and salt. Then, sprinkle the active dry yeast over the top of the mixture and set aside for 10 minutes. Then, stir in the flour until a dough forms. Cover the dough in the bowl with plastic wrap and allow it to rise for 1 hour.
Once the dough has risen, lay it onto a floured surface and use a rolling pin to roll it into a 1/3-1/2 inch rectangle. If the dough is sticky, add more flour.
Spread softened vegan butter, sugar, and then berries and then roll the dough into a log. Slice it into 12 pinwheels and set into a baking dish. Cover the baking dish with plastic wrap and let it sit for 30 minutes.
Preheat the oven to 350. After letting the rolls rise for 30 minutes, remove the plastic wrap and bake them for about 30-40 minutes until the dough is golden and the berries are bubbly.
While the rolls bake, prepare your vegan cream cheese icing by using a hand mixer to mix all of the ingredients together or whisk.
Serve warm and spread the icing over the dish!
