I was really craving a soft pretzel. First time making these. So much fun, and so tasty. 🐻πŸ₯¦πŸ˜‹ .

Vegan Soft Pretzels

Ingredients:
.
Pretzel dough ingredients:
3 tbsp agave or maple syrup
1 packet dry active yeast
1 cup warm water
2 1/2 cups all-purpose flour
2 tbsp melted vegan butter (reserve 1 tbsp for the bowl)

Baking soda bath ingredients:
4 cups hot water
1/4 cup baking soda

Garnish:
1 – 2 tbsp coarse sea salt (you can even use sesame or poppy seeds)
Prepared Mustard

Method:

For the dough:
.
In a large bowl whisk together the agave and yeast. Then add in the warm water and mix. Let stand for 10 mins. The mixture will be foamy. If it isn’t foamy, your yeast is likely too old.
Next, add the flour and 1 tbsp of the melted butter to the yeast mixture and stir in until a rough dough forms. Lightly flour a clean surface. Knead the dough for approx 5 minutes until it forms a firm ball of dough. Then, grease a bowl with the remaining melted butter. Place the dough into the greased bowl and cover with a cloth or paper towel. Allow it rise in a warm spot for 1 hour, or until it has doubled in size.

Forming the pretzels:

As soon as the dough has set for an hour, press it down to remove excess air, remove it from the bowl. Cut the dough into 8 even pieces. Take a piece of the dough and roll into a long rope shape, approx 15”-17″ long. Twist the ends of the rope together, about 3 times, then fold the ends over the middle of the rope to form the pretzel shape. Repeat this process with the remaining pieces of dough.

Cooking the pretzels:

Preheat oven to 400 degrees, and place parchment paper on two baking sheets.
Heat the 4 cups of water in a medium pot until a light simmer. Add the baking soda and stir. Next, place one of pretzels on a slotted spatula submerge it into the baking soda water for approx 5 seconds. Next, carefully place the bathed pretzel on your baking sheet and sprinkle with sea salt. Then, continue with the remaining pretzels.
Bake the pretzels for 12 to 14 mins until dark and golden. Let stand for 10 minutes before serving. Pair with prepared mustard for dipping, or any favorite dip you may enjoy pretzels with.
