I think this Vegan Asparagus Soup is just dreamy!🤩 For some reason, I’ve been making a ton of green soups lately.I love experimenting, and this one I made is definitely a winner. I hope you enjoy!💚⁣

Ingredients⁣
🌱1 med/large shallot or 1 sweet onion chopped⁣
🌱 2 cloves garlic minced⁣
🌱1 large zucchini chopped⁣
🌱 Large bunch of asparagus, about 1 pound, trim stems and chop 1 inch pieces⁣
🌱1 med/large russet potato skinned and chopped⁣
🌱2 1/2 cups low sodium vegetable broth⁣
🌱 1/4 of a lemon juiced ⁣
🌱1/2 tsp – 1tsp of salt or to taste⁣

✔️Heat large pan over medium heat, add onion sauté a few minutes, then garlic for 30 sec, zucchini and salt. If sticking use a bit of vegetable broth or water. Cook and stir for a couple minutes until tender⁣
✔️Add asparagus, potatoes and broth. Bring to a boil, reduce to a simmer and cover and cook until the veggies are very tender, about 10 min⁣
✔️Transfer to a blender and blend on high speed until smooth and creamy. ⁣
✔️Pour back into pot and lemon juice. Mix to combine and add additional salt and/or pepper if needed⁣
✔️You can garnish with blanch asparagus tips and breadcrumbs if desired⁣
