I teamed up with my friends at @LotusFoods to bring you this delicious Vegan Pad Thai Noodle Buddha Bowl made with their gluten-free Tom Yum Rice Ramen Noodle Soup Cup. [AD]
Have you ever tried upgrading your cup of noodles and making something out of it that tastes and looks like a meal you just got from a fancy restaurant? Well, that’s exactly what we did today! Grab the recipe below and tag your Noodle loving bestie!
Vegan Pad Thai Noodle Buddha Bowl
Serving Size 2
Time: 40 min
Ingredients:
3 @LotusFoods Tom Yum Rice Ramen Noodle Soup Cups
1 tbsp of vegetable oil
2 carrots shredded or julienned
1/2 cup of bean sprouts
1 small bell pepper julienned
2 small bok choy sliced in half lengthwise.
1 cup of soy bean cakes or baked tofu
1 cup of cooked mushrooms
1/2 cup sliced and baked lotus roots
1/3 cup of roasted peanuts  
1/3 cup of chopped green onions
Lime wedges
For the Pad Thai Sauce
3 tbsp of vegan fish sauce (found in most Asian markets)
3 tbsp of dark soy sauce
3 tbsp of brown sugar
2 seasoning packets from the Tom Yum Rice Ramen Noodle Soup Cups
2 tbsp of rice vinegar
1 tbsp of Sriracha
1 tsp of minced garlic
2 tbsp of creamy peanut butter
Method:
Combine all the Pad Thai Sauce ingredients in a bowl and whisk until smooth. Set aside.
Meanwhile, make the Tom Yum Rice Ramen Noodles according to the directions on the cup. Do not add the seasoning. Once the noodles are ready, strain the water and leave the noodles aside.
In a preheated wok, stir fry the sliced carrots, bell peppers and mushrooms with one tablespoon of vegetable oil. Add the bok choy and quickly stir fry with the vegetables. Take the bok choy out once it is cooked. We will use the bok choy later in our Buddha bowl.
Add the Pad Thai Sauce to the wok with vegetables and bring it to fast boil, then lower the heat, add the noodles and stir fry everything until the noodles are well coated in the sauce. Add the roasted peanuts, green onions.
Assemble your Buddha Bowls:
Divide the noodles into 2 bowls, add the cooked bok choy, baked lotus roots, baked tofu or bean cakes, lime wedges, sprinkle the noodles with more peanuts and enjoy! #naturallyzuzu
