i made @rachaelsgoodeats CHAI CHOC CHIP COOKIES today + let me tell you they ?? are ??incredible ??
they are gluten free, refined sugar free + vegan. i changed a few things + adapted w things i have in my kitchen. tbh i can’t believe these are considered healthy – they’re just too good. they’re crunchy on the outside +chewy on the inside. @rachaelsgoodeats you’ve outdone yourself. her recipes are amazing so go to her website she has so many great ones.
here’s the recipe:
– 1 flax egg (1 tbsp flax seeds + 2 tbsp hot water) / OR 1 egg if not vegan
– 1/4 cup melted coconut oil
– 1 tbsp almond milk
– 1/3 cup almond butter (any nut butter works)
– 3 tbsp maple syrup
– 1 tsp vanilla extract
– 1 cup almond flour
– 2 tsp chai spice mix *
– 1/4 tsp baking soda
– Choc chips ( i cut up a @evolvedchocolate keto nut butter chocolate bar)
– 1/4 tsp sea salt
*for the chai mix:
– 3 tsp ginger powder
– 3 tsp cinnamon
– 1 tsp allspice
– 1 tsp cardamom
– 1 tsp nutmeg
– pinch black pepper
(use 2 tsp in recipe + store the rest for later use)
preheat oven to 325 F / 160C. mix all wet ingredients together then add in dry ingredients and mix. add in the choc chips last.
place in oven for 12 mins then put oven on broil for 1 min – 1.5 mins. keep an eye out though bc it could burn. take out oven + let cool then enjoy!!! ??
