I made No Egg fried rice and it was so delicious πŸ˜‹
We don’t need eggs, make it with tofu. It’s healthier and tastier than eggs. You will love it! πŸ’•πŸŒ±

INGREDIENTS
– 3 servings
500g firm tofu
1/4 cup soy milk
1/3 teaspoon turmeric
1 teaspoon salt
1 teaspoon raw cane sugar
2 tablespoons vegetable oil
1 cup spring onions, chopped
1 large clove of garlic, sliced
480g cooked rice
1 teaspoon gluten free light soy sauce
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon vegan butter

DIRECTIONS
1. Mash the tofu with a fork. Add soy milk, turmeric, salt and sugar. Mix well, set aside.
2. In a large wok, heat the oil. Add the green onions and cook for a minute.
3. Add garlic, stir until the garlic is slightly brown and fragrant.
4. Add the tofu, cook well for 2-3 minutes. Add the cooked rice and fry well with the tofu.
5. Pour the soy sauce and quickly mix with the rice.
6. Add the salt, pepper and vegan butter then stir until combined.
7. Remove from heat. Place in a plate and scatter over the spring onion to serve.
