I loveeee creamy pasta dishes. Who else??

Really, I think it is one of those meals I could easily live with eating them only for the rest of my life if I had to. Ok, there are other things I probably would miss, but it is just a reference to say how much I like them!

But do you know what takes them to another level? BAKING creamy pasta dishes. A little while ago I made this CREAMY PUMPKIN PASTA BAKE WITH GARLIC AND ROSEMARY NUT CRUST. It was so good that I needed to make it again and improve the things that were not on point yet, so I could share it with you!☺️

The base is a really simple, basic CREAMY PUMPKIN PASTA, but it’s the crust on top that makes it a little more special. Bonus points for taking so little preparation time?
I will definitely make this more often in the future!

(2-3 serves)

-1 1/2 Cup 150g pasta (whatever shape you prefer. If you aim for more protein, feel free to use any legume based pasta!)

Creamy pumpkin sauce
-1 1/4 Cup 300g pumpkin purée
-3 Tbsp (30g) cashews, soaked overnight or in hot water for 30 minutes
-3Tbsp (20g) nutritional yeast
-1 Tsp paprika
-1 Tsp garlic powder
-3/4 Tsp onion powder
-1-2 Tsp lemon or lime juice
-1-2 Tbsp plantmilk
-1 Tsp mustard
-a pinch of nutmeg

Nut-crumble topping:
-3 Tbsp (20g) breadcrumbs
-3 Tbsp (30g) walnuts, pecans or a mix of both (crushed)
-2 large garlic cloves
-1/4 Tsp salt
-1 1/2 Tsp rosemary
-1/4 Tsp freshly cracked pepper

1.Cook the pasta according to the directions on the package. Drain, rinse and set aside. Preheat the oven to 200C.
2.Add all the ingredients for the sauce to a high speed blender and blend until completely smooth. Season with more lemon juice and salt as needed, but keep in mind that the crumble layer will add a bit more saltiness.
3.Combine the sauce with the pasta and fill into a casserole.
4.In a separate bowl mix together the ingredients for the crumble topping. Spread it out onto the pasta in the baking form and bake for 20-25 minutes until golden.
5.Remove from the oven and enjoy while still warm!
