I Love Roasted Brussels Sprouts But Did You Know You Can Shr

I love roasted brussels sprouts but did you know you can shred and sauté them too? This actually creates less waste because the stems don’t need to be cut off when they’re shredded.

This lemony Brussels sprout and pea stir fry is the perfect weeknight meal. The tahini sauce really adds a nice touch 😛

INGREDIENTS

Stir Fry

~10 brussel sprouts
juice from 1 lemon
1 cup frozen peas
1/2 cup dill
salt/pepper to taste
1.5 tsp turmeric
2 garlic cloves
tbsp mustard
1/2 onion
oil of choice
Sauce

1/4 cup tahini
tbsp nutritional yeast
2 tbsp ACV
salt/pepper to taste
water
+2 cups cooked quinoa

INSTRUCTIONS

Shred your brussel sprouts using a food processor or mandoline.
Heat oil in a skillet over medium heat.
Finely chop onion and add to skillet, sautee for 5 minutes. Finely chop garlic and add to skillet along with brussel sprouts, mustard, dill, mustard, turmeric and salt/pepper. Sautee for 5 more minutes and then add peas. Sautee for an additional 5-6 more minutes or until everything has cooked through.
Combine all sauce ingredients in a bowl adding tablespoons of water at a time until the sauce has reached desired consistency.
Serve stir fry over quinoa and topped with sauce
