I Love Pomelo, So Get Ready To See A Pinch Of Pomelo Recipes

I love pomelo, so get ready to see a pinch of pomelo recipes on the page now 🙂 my favorite is this super simple pomelo salad (Yum Som – O)

Ingredients:
For salad:
1. Pomelo chunks – 2 cups
2. Mung sprouts – 1 cup (blanched in hot water for 3-4 minutes and then cooled)
3. Roasted peanuts – 1/2 to 3/4 cup
4. Spring onions – 3/4 cup
5. Caramelized onions – 1/2 cup
6. Shredded dried coconut – 1/2 cup
7. Bird eye chili – 2-3 pieces
8. 1 tbsp maple syrup
For dressing
1. Bird eye chili – 2 to 3 (they’re usually very spicy so use as per palette)
2. Garlic – 3-5 cloves
3. Maple syrup – 1-2 tablespoons
4. Lemon juice – 1/4 to 1/2 cup (depending on taste)
5. Palm sugar (however I use jaggery about one teaspoon)
6. Soya sauce – 1 teaspoon
7. Salt as per taste
Method:
1. In a skillet add the maple syrup and the pomelo and quickly cook so that the pomelo is covered with the maple syrup (this cuts out some of the bitterness of the pomelo)
2. Once done with step 1, add the pomelo into a bowl and add the peanuts, spring onions, mung sprouts and coconut.
3. Mix in the dressing and serve cold.

For the dressing:
1. Pound together garlic and bird eye chili with a mortar and pestle
2. Add in maple syrup and lemon juice (the proportion used can change as per palettes)
3. Add the jaggery and soya sauce and salt
4. Mix it all together and pour on salad
Tip: please try the bird eye chili and don’t add too much. I didn’t realize and made my salad super spicy.
