I LOVE lasagna, but most recipes for it are made to serve at least six people… so what happens when you’re craving lasagna but only have one person to feed? You make this single serve vegan lasagna, of course!🤪 This dish is loaded with tomato sauce, vegan ricotta, and all your favorite veggies🤤 The recipe makes one large portion, so if you’re not super hungry I suppose you could share it, but trust me, it’s so good you’ll want it all for yourself!

Tofu ricotta ingredients:
-1/2 block tofu
-2 tbsp nutritional yeast
-1 clove garlic
-2 tsp dijon mustard
-1/4 cup plant milk
-salt to taste

Veggies and sauce ingredients:
-1 cup chopped veggies of choice (I used onion, broccoli, and zucchini)
-sprinkle cayenne
-sprinkle oregano
-1 cup tomato sauce (homemade or store bought)

Assembly ingredients:
-3 lasagna noodle sheets

Method:
-preheat oven to 450F
-blend all tofu ricotta ingredients in a food processor until smooth
-heat a bit of oil in a skillet and sauté veggies until soft and golden
-mix in spices and tomato sauce, stirring until everything is warm
-in a small baking dish, spread a thin layer of tofu ricotta on the bottom, then add 1 lasagna noodle on top
-spread a layer of veggie tomato sauce on top of the noodle, then add another layer of tofu ricotta on top of the sauce
-continue layering the ingredients until all have been used up, ending with a layer of tofu ricotta on top
-sprinkle the lasagna with crushed red pepper, then cover with tin foil
-bake 30-40 minutes, or until noodles and soft
-remove from oven, uncover from tin foil, and let cool for 5 minutes
-enjoy!
