I Know It’s Wrong To Pick Favourites But These Are My Fave

I know it’s wrong to pick favourites but these are my fave cookies from the cookie box I shared the other day 😍 vanilla almond and a sprinkle of cinnamon make these – crunchy on the edges, soft in the centre – cookies so yum! Here’s the recipe: (makes approx 8 cookies)

1/2 cup almond flour
1/2 cup oat flour
2 tablespoons cornflour
Pinch of sea salt
1/2 tsp baking powder
1/2 teaspoon vanilla extract
4 tbsp maple syrup
3 tbsp coconut oil
Cinnamon to sprinkle
Almond flakes to top

Combine all your dry ingredients in a mixing bowl, then add in your maple syrup, vanilla extract and coconut oil and mix. If it’s too dry then add a little more coconut oil. Place your dough in the refrigerator for 15 minutes to firm up. Now roll into small balls and place on a lined cookie sheet. Press down with your fingers and sprinkle over cinnamon and almond flakes.
