I have been experimenting on a vegan pesto recipe and I think I finally nailed it to my likings! I didn’t end up using any vegan cheese. My secret is using olive oil and nutritional yeast. ❤️💪🏼 Here is the recipe if you wanna try and let me know what ya’ll think! Remember always use fresh ingredients or else It doesn’t come out the same. 😋
-4 Garlic 🧄 cloves.
-2 cups fresh arugula.
-1 cup fresh basil. (You can do 2 cups basil and 1 cup arugula If u don’t like the arugula taste).
-1/2 cup pine nuts.
-1 TSP salt (for taste u can add more if needed).
-1/2 TSP crushed pepper.
-2 TBSP Nutritional Yeast. (Must add this or else it won’t taste as creamy.)
-2TSP lemon zest ONLY. No juice or else it will turn brown!
-pepper for taste.
-1 cup olive oil.
Blend the garlic, basil, arugula, crushed pepper, pin nuts, and nutritional yeast in a blender or food processor. I used a blender. Then add your salt, and olive oil and blend well. Use a spatula to help with the blending process. Add salt, pepper and lemon zest at the end and blend/pulse one last time to make sure everything is blended well. That’s it! Super easy! It took me 10 mins to make this!
