I have been busy cooking from the new amazing cookbook Flavour and at the same time my to do – list for other recipes has been expanding. These incredible Creamed corn-stuffed peppers with pickled jalapeño from @ottolenghi and @noorishbynoor could not just left to be hanging on the list, they needed to be cooked. I’m so happy that I didn’t wait any longer because these peppers are totally worth of cooking. Absolutely delicious! It is easy to prepare, food processor and oven makes most of work. The ingredients for the stuffing is mixed in the food processor. The stuffing is made of sweet corn, cream, polenta, garlic, egg and cheese is so tasteful. Then the Romano peppers are stuffed and laid on a ovenproof saucepan on the top of onions and thyme and baked in the oven for some time. The peppers are finished pickled jalapeños and coriander oil.
