I have always loved curry. It’s up there as one of my fav foods 🔥 and this one does not disappoint!

This one is a delicious potato curry with brown rice.

Recipe ⬇️

Ingredients:
• 1 onion, chopped
• 3 cloves garlic
• 1 tbsp tomato paste
• 150g tomatoes, chopped (I’ve also used a tin of tomatoes, or even passata if I didn’t have fresh tomatoes at hand)
• 400g coconut milk
• 500g parboiled potatoes, chopped
• 1 tbsp curry powder (and maybe a tad extra if that’s your thing)
• 1 tsp garam masala
• 1 tsp turmeric powder
• pepper to taste (make sure you use some though! Without it you won’t get the goods from the turmeric)
• greens of choice (spinach or kale is my fav)
• salt if you like but I don’t find it necessary
• cooked rice/ side of choice

Method
• water sauté garlic and onion
• add tomatoes, cook for a few minutes
• add curry powder, garam masala, turmeric and pepper, stir
• add potatoes and coconut milk, stir and simmer for 5 min/ until potatoes are fully cooked/ until heated through
• add spinach/ kale and let it simmer for a minute or so
• serve over rice
