I had some fun working on this dish today!
Lion’s Mane “Crab” Cakes ???

1/3 cup @followyourheart Vegenaise
2 tbsp Dijon mustard
1 tsp soy sauce
1 tsp ketchup
1/2 tsp hot sauce
1 egg replacement
Coarse sea salt
Black pepper
1 lb shredded (with small chunks) lion’s mane mushrooms
3/4 c panko bread crumbs
1 tsp parsley
Oil for frying (I prefer safflower)
Lemon slices
@followyourheart vegan tartar sauce

Step 1: Mix all wet ingredients in a small bowl, add salt and pepper.
Step 2: Mix lion’s mane mushrooms, bread crumbs and parsley in a separate bowl.
Step 3: Fold lion’s mane mixture into the wet ingredients.
Step 4: Form into small patties, fry on each side for 3-5 minutes (will be golden brown).
Step 5: Serve with lemon slices, top with Tartar sauce and pea or radish sprouts.?

Today, the “crab” cakes were served on a bed of coleslaw, radish sprouts and radish slices, for some added refreshing crunch!
