I had only a few potsticker wrappers left and just a tiny bit of leftover pumpkin puree that I didn’t want to go to waste. In come these super crispy pumpkin pie dumplings 🥟 and they were TOO GOOD not to share. It’s super easy to make and a quick fix when you crave some pumpkin pie 💁🏻‍♀️. 𝐀𝐢𝐫 𝐅𝐫𝐲𝐞𝐫 𝐂𝐫𝐢𝐬𝐩𝐲 𝐏𝐮𝐦𝐩𝐤𝐢𝐧 𝐏𝐢𝐞 𝐃𝐮𝐦𝐩𝐥𝐢𝐧𝐠𝐬 ⁣⁣
⁣⁣
3 Tbsp pumpkin puree⁣⁣
1 Tbsp coconut sugar or brown sugar ⁣⁣
1/2-1 tsp pumpkin pie spice (or to taste, I added close to 1 tsp)⁣⁣
1/4 tsp cinnamon ⁣⁣
8 potsticker wrappers ⁣⁣
⁣⁣
Maple Dipping Sauce⁣⁣
1/3 cup powdered sugar⁣⁣
1 tsp pure maple syrup⁣⁣
1/2-1 tsp almond milk⁣⁣
dash of pumpkin pie spice ⁣⁣
⁣⁣
In a small bowl, add the pumpkin, coconut sugar, pumpkin pie spice, and cinnamon. Stir until well combined. Taste and adjust sweetness and spice level (I like a lot of pumpkin spice). Take potsticker wrapper and dip your finger in a small bowl of water and run it along the border of the wrapper. Place about 1 tsp of pumpkin mixture in the middle. Pleat the edges and place on a plate while you wrap the rest. Make sure you pleat/pinch the edge tightly to prevent leaking while cooking. Place a piece of foil at the bottom of the air fryer basket and spray with oil. Place dumplings on the foil and spray the tops of the dumplings with oil. Air fry at 380 degrees F for 4-5 min or until golden and crispy. While dumplings are cooking, add all glaze ingredients in a bowl and stir until combined. Add more almond milk if too thick or more powdered sugar if too thin. Dip crispy pumpkin pie dumplings in the glaze and enjoy! Best when eaten fresh. ⁣⁣
