I don’t know why it never occurred to me before that hummus can be used to make a quick and delicious falafel.
I’ve been making hummus almost weekly and this week’s turned out so garlicky it needed to be rescued. That’s when the idea of turning it into falafel hit me! Both are made out of garbanzo beans anyway, right?

~ About 2 cups of hummus ( soaked and cooked garbanzo beans, tahini, salt, cumin, garlic, lemon juice, water)
~ 2 eggs
~ 3 Tbsp blue corn masa flour (more for dusting)
– olive oil for frying

I mixed everything, let it sit in the fridge until dinner time, then formed balls, dusted them with corn flour and shallow fried just until golden and crisp on both sides.
I made 8 rather large patties, 12 smaller once would be better, but I was pretty hungry when I was making them, so large once seemed like a good idea at that time:)

Homemade pitas:

4 cups of AP flour
1 Tbsp dry yeast
1 Tbsp sugar
1/2 Tbsp salt
4 Tbsp olive oil
300 ml lukewarm water

Mix all ingredients, form dough, let it rise until doubles.
Punch the dough down, divide into 8 parts. Roll each part into about a 1/4 inch thick circle. Let the circles rest for about 20-30 min. Dry fry each pita in a hot pan for a few minutes on one side, then turn over, cover with a lid and fry for a few minutes on the other side.

Last night’s dinner was a hit!
