I decided to try veganizing my mom’s strawberry bread and it turned out even better than I remember 🍓Growing up in North Carolina, it never really felt like summer to me until we went strawberry picking and made some delicious strawberry bread. Sadly I did not have fresh strawberries on hand so I used frozen and it worked just as well. Also, just because I’m extra, I added some @foragerproject cashew milk yogurt on top…YUM. Strawberry Bread
• 3 cups flour
• 1 tsp salt
• 1 tsp baking soda
• 1 tablespoon cinnamon
• 2 cups sugar (I used 1 1/2 cups sugar and 1/2 cup maple syrup)
• 2 1/2 cups strawberries
• 3 flax eggs
• 1 cup oil
• 1 cup chopped nuts (this is optional, but I threw in some walnuts and it was delicious)

Mix dry ingredients, and then make a well in the middle and add remaining ingredients. Mix thoroughly and pour into two greased and floured loaf pans (they can also be made as muffins). Bake at 325 for one hour, let cool + enjoy! 🌱
