I crave raw vegetables for lunch lately. This zucchini salad is great for a quick light lunch. Just 3 ingredients needed + a good dressing.

INGREDIENTS:
Serves: 1 serving
What you need:
100 g firm tofu, cut to cubes
1 zucchinis
1/2 cup peas, blanched
DRESSING (1/2 jar)
2 Tbsp tahini
1/2 cup water
2 Tbsp rice vinegar
1/2 garlic ground
1 Tbsp soy sauce,
1 Tbsp rice sirup (or marple)
INSTRUCTIONS
Add all ingredients for the dressing in the blender. Fill a serve of dressing in a bowl and add the cubed tofu to absorb some flavor. Fill renaming dressing in a jar and store in the fridge.
Blanch peas and cool with cold water. Spiralized fresh zucchini an add together with the peas on top the tofu. Give it a good stir to cover everything with dressing or add some additional dressing on top. Garnish with some roasted peanuts on top.
