I am the only one who’s in love with budha bowls?
This are always my go to lunch
Ingredients are:
-1/3cup of brown rice (raw)
-1/2 block of regular size tofu or tempeh (100g)
-1 full hand of garden lettuce -1/2 from a whole medium size carrot -1/4 from a whole medium size tomato -1/5cup of frozen green peas -1small garden cucumber or 1/3 from a regular market one
-few cilantro leaves (for garnish)
-2tsp of tahini
-1tsp of lemon juice
-1tsp of agave syrup (optional if you like the sweet&salty flavor)
-1tsp of soy sauce or coconut amino
Method
-rinse and cook the rice for about 15min.
-cut tofu or tempeh in to small cubes and fry pan it while the rice get cooked -wash and chop/slice/shred the veggies and put them on your plate -for sauce, mix the tahini with lemon juice and a splash of water -when the rice it’s almonds st done add the green peas to it, bring to boil again and remove from the heat -strain it and add soy sauce -mix and place the result on your plate + the tofu/tempeh -spread the sauce on top, add some fresh herbs and ENJOY!
