What a fantastic way to #reducefoodwaste! Also it’s yummy and #healthy, as watermelon rind contains vitamins and minerals.

This dish incorporates the white part of the #watermelonrind (not the hard, outermost green part). It’s easy – just slice the green portion off with a knife, no peeling or scraping needed.

If anyone has ever had lauki ki subji (bitter gourd #curry), that’s what this tastes like.
? INGREDIENTS: ?
– Watermelon rind
– Cumin seeds, whole red chilis
– #Turmeric, #hing (asafoetida), coriander powder, cumin powder, chili powder, garam masala, salt
– Coriander for garnish
? NOTES: ?
– The recipe calls for #gur (jaggery) but we skipped this as the dish already has some sweetness. We also skipped the mustard seeds.
– Optional: My parents also added amchoor (mango powder) and green chilis.
