How is your week going? Ours has been a bit hectic, but no excuse not to eat well.? A simple stirfried Chinese eggplants with spicy garlic sauce does the trick. It doesn’t take long to make and tastes great. ??? Recipe ➡️ Ingredients for 2 servings:
? 2 Chinese eggplants cut into 3” to 4” long small pieces
? 2 tbsp soy sauce
? 2 tsp granulated sugar
? 1/2 to 1 tbsp Chinese zhenjiang (black) vinegar
? 1 tbsp shaoxing wine or dry sherry
? 3 cloves of garlic minced
? 1 tbsp ginger minced
? 1/2 to 1 tsp red pepper flakes or 1 to 2 dry red chilis chopped (skip if you prefer non-spicy)
? 1 tsp sesame oil
? 1 to 2 scallions chopped into small pieces

Steps:
1) In a small bowl, mix together soy sauce, sugar, vinegar, and wine. Taste and add more seasoning if needed. Set aside.
2) Heat 1 tbsp cooking oil in a skillet over medium or medium high heat. Add eggplants. Stir and cook until golden brown outside and tender inside. Set aside.
3) Heat another tbsp cooking oil in the same skillet over medium or medium high heat. Add garlic, ginger and red pepper flakes or dry red chilis. Stir for a minute or so till fragrant.
4) Add eggplants, pre-made sauce, and sesame oil. Stir a couple minutes to mix well. Taste and add more seasoning if needed. Add a little water if it seems dry.
5) Serve on plate. Top with scallions. Enjoy immediately. ?
