Homemade vegan cheeze Tortellini ???

One of my intentions this year was to learn how to make homemade pasta well. If you’ve ever had fresh vs dried, it is not even a question.???

I haven’t made tortellini before, but it actually wasn’t that difficult! I feel like, if you’ve ever made dumplings (jiaozi) from scratch, you know how to get into a zone of stuffing and rolling, and it becomes a little bit meditative. Idk why I like that zone, but I do.??

The tortellini is stuffed with a cashew ricotta, and I served it in a thick tomato broth with spinach and homemade vegan Italian sausage chunks. My husband’s super soft artisan bread was the perfect accompaniment!?

The dough is a simple pasta dough that I chilled in the fridge for an hour before using, and then rolled out very thinly by hand.

Here is my super easy cashew ricotta recipe. You can use it for everything- from stuffed pasta to toast spread.??

100 g soaked cashews
1 clove of garlic
2 Tbsp nutritional yeast
1 tsp lemon juice
1 tsp apple cider vinegar
1/4 tsp basil
1/4 tsp garlic powder
4 Tbsp water
Pinch of nutmeg
Salt and pepper to taste

Add all ingredients to a food processor or blender and blend until smooth! Pipe about 1/2-1 tsp onto tortellini dough with a piping bag for best results.
