Homemade sauce & vegan meatballs ?

It’s been a while since I’ve had vegan meatballs and I picked up the #plantchef ones this week from @tescofood. I cooked the below for 3 people and also had some sauce left over for another dinner ???

To make the sauce:
* 3 tomatoes
* 1 red pepper
* 4 small red onions
* 1 tin chopped tomatoes
* 1tbsp garlic powder
* 1tbsp oregano
* 1tbsp basil
* 1tbsp balsamic vinegar
* Salt and pepper

Extra veg:
* Half a punnet of mushrooms
* 1 courgettes

1. Roast all of the roughly chopped red veg with the garlic powder and some garlic infused olive oil for 30 mins (giving it a stir halfway)
2. Whilst the veg is in the oven, fry off the finely chopped courgettes and mushrooms. Also fry the meatballs on a low heat for 15 minutes
3. Blend the veg with the chopped tomatoes, basil, oregano and balsamic vinegar until smooth
4. Stir the sauce into the fried courgettes and mushrooms and add in the meatballs
5. Serve with spaghetti and top with salt and pepper
