Homemade Indian feast 🌱

Red lentil Dahl, mushroom fried rice and Bombay potatoes with @shanafoods garlic paratha. Best tea I’ve had in ages 💚💚💚

Red lentil Dahl recipe
(I usually double it to make some to freeze) 💚

1 tbsp olive oil
2 small white onion, chopped
1 red onion, chopped
200g dried red lentils
1 tbsp chopped ginger
4 garlic cloves, minced
1/2 tsp chilli flakes
1/2 tsp coriander
1/2 tsp cumin seeds
2 tsp turmeric
1/2 tsp mustard seeds
1 tsp garam masala
400ml tin coconut milk
Tin chopped tomatoes
500ml veg stock
Salt and pepper
Juice of half a lemon

• Fry onions for 5 mins in oil over medium heat. Add garlic, chilli flakes and ginger, cook for a further couple of minutes.

• Grind cumin, mustard seeds and coriander in a mortar and pestle gently.

• Add to pan with garam masala and turmeric, cook for a further 2 mins.

• Add lentils, tomatoes, stock and coconut milk, season with salt and pepper and stir well. Cook for 40-45 minutes until sauce has thickened and lentils are tender.

• Stir in lemon, cook for 3 more mins. Top with chopped coriander and serve with @lailanaturals basmati rice 🌿
