Homemade chapatis… my biggest achievement of this week.

Made the most delicious curry completely from scratch ❤

Roasted up some butternut squash and chickpeas along with some curry powder. Sauteed some red onion with garlic and a mix of spices (basically everything in the spice rack: ginger, cumin, cayenne etc). Added a tin of tomatoes and some fresh apricots. Blitzed this to a paste. Then added a couple of grated carrots, added in all the roasted ingredients, and chucked in a couple of handfuls of spinach. I then let it simmer for AGES. Served with homemade chapatis (see BBC good food) and some basmati rice. Y U M
