Homemade Baked Gnocchi with Spinach Pesto Sauce
My favourite comfort food always contains potatoes in it! This time I made beautiful crispy gnocchi and covered in homemade pesto. Just yumm!

Ingredients:
•500g boiled and peeled potatoes
•1 tsp salt
•2 tbsp olive oil
•2 cups all purpose flour, more as needed
For pesto:
•1/2 cup spinach
•1/2 cup parsley
•1/2cup green olives, pitted
•1/4 tsp salt
•2 garlic cloves
•1/4 cup walnuts
•4 tbsp olive oil
•1/2 lemon juice
•splash of water for the consistency

Directions:
In a large bowl add or mashed potato, salt, olive oil, and flour and using clean hands mix the ingredients together and then squeeze to gently knead it into a ball. If the mixture is sticky add flour until it no longer sticks to your hand. Take a small section of dough at a time to form into long sausage shape, cut around 1,5 cm gnocchi’s and bake in the oven until crispy and golden brown.
Meanwhile add all the pesto ingredients in to food processor and blend until creamy consistency.
Mix pesto with baked gnocchi and serve it! Enjoy!
