Hi.. Yesterday i made Lodeh Tempe with limited ingredients. Its great and maybe you will like it! Perfect for vegetarian and vegan.
300gr Tempe, dice and fried for 5minutes
1 carrot, cut batonnet (julienne if you want to cook faster)
1 chayote, cut batonnet or julienne
2 tbsp (or more if you like) thick coconut milk
2 litres water
2 tbsp sugar
Salt and pepper
4 arbol dried chilies
1tsp curcuma powder
¹/2 tsp coriander seeds
3tbsp cooking oil
1. Heat your pot, saute the ground spices, put lemongrass and bayleaf. Stir it well until you can smell the aroma.
2. Pour the water (I prefer hot water), cook until half boil, add carrot, chayote, and tempe. Cook until carrot and chayote soft.
I like to add fried shallot as garnish and eat with rice cake or steamed rice.
